Typical sauce prepared with parsley (not the one with the tiny little leaves that is only ornamental and in Greece is placed outside the houses as a good omen) used above all as an appetizer accompanied by pita (the classic Greek bread) or toasted bread.
To see it it looks very similar to our “pesto” but it is only the color because the only common ingredient is basil.
