Crete is an island that offers everything on a food level and its cuisine is considered one of the healthiest.
The territory rich in plains, mountains and of course the sea gives its inhabitants excellent olive oil, tasty meats, fresh fish, legumes, vegetables, wine, fruit and a wide variety of herbs that give a particular flavor to all dishes.
Today we offer a traditional recipe from the Kapriko area of Chania. Kapros (in Greek means "male pig") is a delicacy that is precisely prepared with the part of the thigh or shoulder of pork cut into large slices sprinkled with salt for marinating which lasts as now, cooked in the oven and wrapped in leaves of lemon to flavor.
